Maria’s Homestyle Mexican Food is a Small Catering Business located here in Fargo North Dakota. Working out of Square One Kitchen Rentals located at 1407 1st Ave N.

We started in 2012 as a hobby, was literally making food for friends and their families and by word of mouth the requests kept growing. In 2017 we decided to go full force forward as a Catering Business.

Tell us about your journey with food – early memories and why did you decide to pursue it full time?

This journey began because we as a family were missing the convenience of eating at local Taquerias and the flavors of home. Maria started practicing recipes at home to master them so that she could ease her family from being home sick and also a way to keep them connected to our culture.
Making calls to her mom and grandma and Aunt and help from digging into her memories, has grown in her cooking style and mastering traditional mexican recipes.

Eventually we started doing Pop Ups and worked our way up to owning a Food Trailer. You can find us doing Pop Ups during the Summer mostly at the Red River Farmer’s Market on Saturdays and different Local Brewing Establishments and Other Local Businesses on other days.

During the Winter you can find us serving Pick Up Orders To Go and Heat & Serve Meals and Tamale Sales out of Square One Kitchen Rentals. We also cater to small groups of 10 up to 200 people.

You picked Tacos Al Pastor for the event, tell us about the dish and share a memory you have connected with it

I chose Al Pastor de Pollo because it’s a Family Favorite. Soft warm Corn Tortillas filled with the delightful smoky flavor of the chicken that has been Marinaded with chipotles in adobo sauce smoky flavors are enhanced by grilling, it levels up the flavors topped with grilled fresh Pineapple and the beautiful natural sweetness along with cilantro onion squeeze of a fresh lime bring forth such bursting flavors you’ll never forget and will always keep you wanting more. They are typically topped with a Spicy Arbol Salsa for those who like the heat.

Ever since I 1st tasted this Taco all I could do was wait for more and no one out here was making them the way I remembered them from California, so I would only get to eat them once a year when I went back home, so I learned how to make them and enjoy introducing it to the people of our community and its perfect for grilling season.

Maria Carpenter-Ostos is the Owner/Cook and alongside her is her Daughter Amanda and Husband Frank Ostos (and various other family members), together they take Great Pride in serving Traditional Mexican Food served up just as they remember it growing up in California.
